Quick And Nutritious

A quick and healthy breakfast, a family favorite, “The avocado egg enchilada!” Well whatever you want to call it. Its yummy! If you have to get your kids off to school in the morning or rush out the door to work then you may want to prepare the night before. Just grate the cheese and slice up some avocado or veggie of your choice. Then throw it in the fridge until morning.
All you need is:
4 eggs (egg whites if you want to be really healthy)
1/3 cup of cheese
2-3 tortillas
1/4 avocado sliced
1/4 cup of salsa
Total time: Less than 10 minutes!
Whisk the eggs in a small bowl, then pour into your pan over medium-high heat. Scramble for a minute or so until eggs are set and then add cheese. Meanwhile microwave the tortillas for 20 seconds.
Then fill the tortillas with a portion of the egg mixture, add a few slices of avocado and top with salsa. Roll up and enjoy! We even make this for dinner sometimes when we run out of ideas. Try it, you’ll love it!
