Black Bean Spinach Wrap

This is a yummy and mostly healthy black bean spinach wrap. I was reminded of it while reading Dana’s yummy Lime Spiked Black Bean Dip recipe from her last weeks Tasty Tuesday.

Here what you need:

Tortillas
1 bag of baby spinach
1 can of black beans rinsed and drained
1 small bundle of cilantro
1/2 cup sour cream
Juice from one lime
Pinch of salt and pepper
Add peppercinis, bell peppers, grated carrots, etc. (Just throw in whatever you like)

Put beans, cilantro, sour cream, lime juice, and salt and pepper in food processor and pulse until mostly smooth. Then scoop onto a slightly warmed tortilla/wrap and top with peppercinis and bundle of baby spinach. Wrap it up, eat, and enjoy!

Sounds delicious! Pretty soon (I hope!) I’ll have spinach growing in my garden so I can use it on stuff like this! yay! :)
